I love to bake, but I’m trying a new diet to try and stay away from things to which I’m theoretically (by skin testing) allergic. That means no wheat, no corn, no legumes, no grains of any sort for a while. I can have nuts except for peanuts and cashews. I can have seeds, a little rice, and hemp (so far).
Where can I find recipes for cookies and goodies online?

I don’t know of sites out there offhand, but here’s a recipe I made up when my friends were on a low-carb diet. It passed the coworker test, even though I still haven’t made a batch for them!
Almond cookies
1/2 c sugar
2 eggs (US Large)
1/2 tsp baking powder
1 1/4 c almond flour*
1 t vanilla extract
1 Tbsp melted butter (can substitute an oil of your choice is butter is off your menu)
Preheat oven to 400F. Mix ingredients together, and drop onto cookie sheet by spoonfuls. Bake 8-10 minutes, until set and slightly browned. Cool about 1 minute on cookie sheet, then transfer to cooling rack.
*Almond flour can be purchased or made with raw natural almonds in flood processor until a med-coarse meal. If you overprocess, you will get almond butter instead.
You can probably use this as a base for thumbprint cookies with a fruit filling as well.

Has anyone made this without the eggs? Which substitute worked best, or did you just leave them out? I am planning to substitute tahini mixed with some water for the eggs, and agave syrup for the sugar.
